The judgment of the end of the freeze-drying process is very important, and it involves the quality, output and economic benefits of the product. However, so far, there are no scientific instruments and methods. The existing method of judgment is still an empirical method. 1) Temperature judgment method. During the freeze-drying process, it is necessary to measure the temperature of the shelf of freeze drying equipment and the temperature of the material, and the control system of freeze drying equipment will record the production curve. When the measured shelf temperature is close to the material temperature, it can be considered that the drying process is close to the end. 2) Pressure judgment method. During the freeze-drying process, the vacuum level in the freeze drying equipment should be continuously measured. When the measured pressure is stable for a long time, depending on the variety and quantity of freeze dried products, it usually takes 1 to 2 hours. It is believed that the freeze drying process can be ended. 3) Humidity judgment method. This is a theoretically feasible method, but the actual operation is more difficult. This method needs to install a hygrometer in freeze drying equipment to measure the humidity in the freeze drying equipment, and then determine whether the drying process can be completed.
Drying at low temperature can reduce the deformation of heat sensitive products and keep the original color, fragrance, taste and shape unchanged. Freeze drying equipment is carried out under low pressure to protect easily oxidized substances. At the same time, due to low temperature and hypoxia, it can sterilize or inhibit the activity of certain bacteria, so that the properties of the product remain unchanged.
